I agree completely that tamales are the food of choice throughout Mexico for celebrating special events, fiestas and holidays. However, I kinda got the sense you may not be fully aware of the significance of pavo to the country-wide Mexican cuisine. indeed, turkeys originated in and are indigenous to Mexico/Mesoamerica; first domesticated there perhaps 2-3,000 years ago (sidenote: dog was the other animal domesticated there for food).  Also, &quot;salsa&quot; is not the best translation for &quot;gravy&quot;; that would probably be &quot;jugo de carne&quot;, or, I suppose, &quot;jugo de pavo&quot;. I don&#039;t think it&#039;s popular, if used at all. On the other hand, at least in mainland Mexico, pavo con mole is considered by many to be the national dish. I&#039;ve had it and it is delicious. Hope to visit La Paz next spring. Good eating!]]></description>
